Homemade Coconut Hot Chocolate on a Snowy Day – Nikki’s Coconut Butter Review {Ad}

A few months back I ordered a jar of Nikki’s Coconut Butter in the Chocolate Hazelnut Brownie flavor.  To be honest I liked it but didn’t really know what to do with it.  But today…ta daaaa!

Since it’s a snowy day I was really craving hot chocolate and so were the kids.  I got the can of hot chocolate out and ughhh!  Really?  You would not believe the amount of strange ingredients in hot chocolate mix?!  So anyway I decided to make some of my own.  Enter Nikki’s Coconut Butter 🙂 (click to find out more about Nikki’s Coconut Butter Products

Coconut Hot Chocolate

8 oz of almond milk (I used Silk unsweetened)

2 Tablespoons Nikki’s Coconut Butter (Chocolate Hazelnut Brownie flavor)

1 Tablespoon Maple Syrup

1/2 Tablespoon Dark 100% Cocoa Powder (because I love me some extra dark chocolate flavor)


Heat all ingredients to a nice simmer so all the ingredients blend together, let cool and yum!  Hot chocolate with a nice hint of coconut that doesn’t scare the heck out of me 🙂  Enjoy!Screen shot 2014-01-29 at 3.07.29 PM

Color me Rad! And Excited!

I was just notified that I have been picked to be an Ambassador for Color Me Rad when it comes to Virginia Beach in November!!

Have you ever tried Coconut Water?

Coconut water.  You’ve probably heard of it, but have you ever tried it?  Do you know the benefits of drinking it?  Check this out.  Did you know coconut water is:

  • a great all natural way to hydrate?
  • low in sodium
  • has potassium  (which is great for me because I have a banana allergy)
  • has a naturally sweet / nutty flavor

After a recent 80+ degree trail run I remember I had Zola stashed in my fridge (I had been hiding it from the kiddos) so I thought what a perfect time to try it.  I tried the Zola 100% Natural Coconut Water in a can.  (there are two servings per can:  55 cal / serving)  Now I have to say I was a little wary because I have tried other flavored coconut brand waters before that I didn’t really like.  However I found Zola quite pleasing.  I drank half the can and saved the rest for later.

I enjoyed the flavor and the fact that it has potassium, Being allergic to bananas myself I’m always a little worried about not getting enough in my diet.  I think I will try adding it to my smoothie since I can’t throw in a banana like a lot of runners do.  Maybe I should also bring some to my next race since I always have to pass by the free banana table.  Good idea 🙂

I have mentioned Fooducate before but I thought January would be the perfect time to introduce those of you that don’t already know about it to this wonderful app.  I started using it about 6 months ago.  This is a really simple, yet extremely educational tool for your food shopping arsenal.   I took this quote direct from their Facebook page because well, I thought they explained it best.

“Fooducate is a personal grocery advisor, helping people make healthy food choices for their families. Fooducate’s nutrition app is available online and for iPhone and Android mobile devices”

So how does it work?  It’s simple…just download the app to your smart phone, scan the bar code of item you are thinking of buying (right off the package) and wahla.  You get a “Grade”  (from A to D) for that product.  As you can see this one got a B+. (Tuna just happened to be my lunch today.)  You will also see some helpful info about the item including FoodPoints for those of you counting.  If you tap on the item it will then bring you to a screen with more specific details of your item.   There is also an “Alternatives” tab , which is one of my favorite features.  The Alternatives tab will show you similar items that received the same or better score!  Awesomeness 🙂


Fooducate has been not only a great way to find healthier items, but an eye-opening experience.  You would be surprised how some of the “healthy” items in your cart stack up.

Now I agree this can be a little time-consuming at first, but once you know which choices are better, in the future you just scan new items before you add them to your cart.

You could also save time by going through your pantry first to check the score of  items your regularly choose.

Our household goal for 2013 is to try to choose that score no lower than a B-, MOST of the time.   Easy, maybe not but its a good goal.

🙂 🙂   One caveat…don’t scan cupcakes, NEVER scan cupcakes 😉  Save cupcakes for after a race…..Now back to my featured blog.  🙂  🙂

First off lets talk about the actual box.  It’s 100% recyclable, just throw it in your bin.  Cool, we at RunFYHP household are big into recycling.  And my oldest son (aka: the trash man) is probably the only one to complain about that. 😉

But let me just show you the generous amount of snacks in their December box.  This is my first box ever so I was pleasantly surprised at the amount included.  The boxes are come in different sizes starting at $33/month (plus shipping)  for a 16-20 serving box, like mine and according to the website contents change monthly.  And yes they do deliver to Canada (additional shipping applies)

I have to say I am pleased at the amount and variety included.  There are some items I have tried before and a bunch I had not.
